Cheese tasting: Raclettes du Valais DPO
Saturday 11 and Sunday 12 June – special, free raclette cheese tasting. Made exclusively from raw milk from the Val de Bagnes in the canton of Valais, these raclette cheeses all have the Protected Designation of Origin (PDO) seal. Cheesemaker Eddy Baillifard has been making cheese for 30 years. At the House of Switzerland, he and his son Romuald have been serving 16 whole cheese rounds, each one weighing 5 kilos. Real raclette is the typical taste of the Swiss Alps.
Saturday 11 and Sunday 12 June – Eddy and Romuald have been dishing up raclette in the traditional way, with potatoes, pickled onions and gherkins. To drink there has been of course a selection of wines from the canton of Valais.
Eddy, who is not only a cheesemaker but also a farmer, made the trip to Paris specially for the House of Switzerland. He is a regular at the Paris International Agricultural Show, which he attends every year with his cows and wines of his native Valais.
